The RV Chronicles — Valentine’s Day 2016: The ‘Jimmy Rockford’ year (Recipe: Avocado Crab Salad)

If you are one of my 16 loyal readers, you know that I’ve been living in an RV (named the ‘Jimmy Rockford’) near the Galveston Bay since August, 2015. I came here for a job while the love of my life hung back in our hometown to sell the house and wrap up our affairs. I miss her dearly.

Dear Catherine,

You’ve said through the years that you are very lucky to have someone who cherishes you as much as I do. Truth is, I’m the lucky one.

Extremely lucky.

I’m extremely lucky because when I look into your eyes, I see my lover.

I’m extremely lucky because the person behind those eyes shares her dreams with me. And nurtures my dreams.

I’m extremely lucky because of your selflessness and substance. You are beautiful in every sense of the word.

I’m extremely lucky because you soothe me, no matter the pitch of darkness.

I’m extremely lucky because my mind’s theater plays mostly visions of you. They are wonderful scenes indeed.

I’m extremely lucky because I have a soul mate. She loves the whole me, even with my many imperfections.

I can’t wait to be with you again.

Love always,

Indeed, avocados are widely considered to be an aphrodisiac (they’re known as the ‘love fruit’ after all). I reintroduced my bride to these beauties early in our relationship and she’s been infatuated with the green buttery goodness ever since. She’s also a founding member of the lump crab fan club, as well as a dedicated cilantro convert. I made the following recipe for her the last time we were together. Suffice it to say, she was impressed.

  1. ❤️❤️❤️ Still the luckiest girl in the world! Thank goodness I didn’t wear mascara today!

  2. What a lovely tribute to your wife. Recipe sounds delicious. Love our Dungeness crab on the west coast, look forward to trying this recipe.

  3. That was the singularly BEST thing I have ever read! I love it!!! Nothing is better than being with your best friend and soul mate.

  4. That ended a very long day very nicely indeed.
Good job young man, work very hard to keep that going.

  5. They say the way to a man’s heart is through their stomach. I think in this case it might be just the opposite. However that sentiment sure doesn’t hurt! Happy Valentine’s Day to you and Catherine.

  6. Fresh and perfect seafood salad. I love your honest and sincere posts to your wife. Most of the time, if I’m honest, stuff like this makes me gag. Your sentiments seem always truly heartfelt!

Thank you, Debra. They’re heartfelt indeed. My bride has had my back — many times when I didn’t deserve it — for more than 21 years. She is truly my strength.

Oh Adam, what a heartfelt tribute to your beautiful wife! I do know you miss her greatly. What a perfect Valentiine’s Day treat for her. <3 Oh and that crab salad is going on my list to make for when we go crabbing again this year. YUMM! (p.s. a little token of my appreciation is within our 'reliable' U.S. Postal System as we speak.)

I’ve not had the opportunity to go crabbing since my days living along the Jersey Shore. (And I confess that I missed those opportunities.) This is a good salad. The best word to describe it is ‘clean.’ It’s not heavy. You don’t feel blah after eating it. And it goes down oh so easy. 😉

  8. Damnit, Holland, you made me cry. The avocado/crab salad looks outstanding but I love how you spill your heart out to your sweet Catherine like that! You’re a rare breed (a.k.a. man) that bares his heart and soul!!

    • adamjholland says:

I’m definitely an open book, Shea. Whether it’s the good, bad or ugly. Catherine is the good. 🙂 Thank you.

  9. How much longer until she’ll move to Houston? Very nice letter Adam and very nice crab salad. I bought crab legs from Whole Foods for our dinner last night. I swear they were the sweetest and meaty-est ever. Or else its just been too long since I’ve had crab legs.

    • adamjholland says:

Thanks, Lea Ann. The earliest she’ll move down here will be June, when her job contract expires. It could be longer, as she plans on staying around until the house sells.

  10. I have made crab salad before – but never like this!! YUM! Sweet love letter to your wife too!

    • adamjholland says:

Thank you, Kelli. This is a quasi-common crab salad at Tex-Mex joints in my neck of the woods. (Of course, I like mine more!)

  11. Dear Adam and Kathrine – both JS and I loved Adam’s ‘declaration of love’ and your comment. Go on loving each other – the world needs a bit more of this!
The Crab salad sounds and looks absolutely delicious – off to the kitchen now and making it for tonight’s supper. Thank you, Adam. Oh, btw – I am following you now 🙂 🙂

    • adamjholland says:

Thank you, Carina. I appreciate your kind words. And you are my 17th loyal follower! 😉 Thanks!
