The RV Chronicles — Valentine’s Day 2016: The ‘Jimmy Rockford’ year (Recipe: Avocado Crab Salad)

If you are one of my 16 loyal readers, you know that I’ve been living in an RV (named the ‘Jimmy Rockford’) near the Galveston Bay since August, 2015. I came here for a job while the love of my life hung back in our hometown to sell the house and wrap up our affairs. I miss her dearly.

Dear Catherine,

You’ve said through the years that you are very lucky to have someone who cherishes you as much as I do. Truth is, I’m the lucky one.

Indeed, avocados are widely considered to be an aphrodisiac (they’re known as the ‘love fruit’ after all). I reintroduced my bride to these beauties early in our relationship and she’s been infatuated with the green buttery goodness ever since. She’s also a founding member of the lump crab fan club, as well as a dedicated cilantro convert. I made the following recipe for her the last time we were together. Suffice it to say, she was impressed.

Avocado Crab Salad

Avocado Crab Salad — Fresh. Delicious. A real aphrodisiac.

Ingredients
  • 1 lb – Lump crab, picked through
  • 3 – Large avocados, pitted and halved
  • 3 TB – Mayonnaise
  • 2 TB – Chopped fresh cilantro
  • 2 TB – Chopped green onion
  • 6 cups – Chopped lettuce, cabbage or a combination
  • 1 cup – Pico de gallo (recipe below)
  • 1 – Lime, halved
Pico de gallo
  • 1 – Large tomato, diced
  • 1 – Small onion, diced
  • 2 TB – Chopped fresh cilantro
  • 1 TB – Chopped fresh jalapeño or serrano
  • ¼ cup – Chopped mango (optional)
  • 2 tsp – Kosher salt
  • Juice from one lime
Instructions
  1. Combine crab, mayonnaise and cilantro; refrigerate for an hour.
Make pico de gallo
  1. Combine all ingredients. Cover. Allow flavors to meld for an hour.
Just before serving
  1. Place 1 cup of lettuce/cabbage on a salad plate; top with avocado halves.
  2. Squeeze lime juice over avocados for flavor and to prevent browning.
  3. Spoon crab mixture into the avocados, dividing between the 6 halves.
  4. Top with desired amount of pico de gallo.
  5. Garnish with green onion.
  6. Serve immediately.

      I’ve not had the opportunity to go crabbing since my days living along the Jersey Shore. (And I confess that I missed those opportunities.) This is a good salad. The best word to describe it is ‘clean.’ It’s not heavy. You don’t feel blah after eating it. And it goes down oh so easy. 😉

  9. How much longer until she’ll move to Houston? Very nice letter Adam and very nice crab salad. I bought crab legs from Whole Foods for our dinner last night. I swear they were the sweetest and meaty-est ever. Or else its just been too long since I’ve had crab legs.

      Thanks, Lea Ann. The earliest she’ll move down here will be June, when her job contract expires. It could be longer, as she plans on staying around until the house sells.
